Healthy Carrot Banana Chocolate Chip Muffins
½ cup (125 mL) granulated sugar
½ cup (125 mL) plain yogurt
⅓ cup (80 mL) canola oil
2 large eggs
1 cup (250 mL) carrot, grated
2 bananas, mashed
1 tsp (5 mL) vanilla
2 cups (500 mL) all-purpose flour
1 tsp (5 mL) baking powder
½ tsp (2.5 mL) baking soda
2 Tbsp (30 mL) chia seeds
1/2 cup (125 mL) chocolate chips
1. Preheat oven to 180°C or 160°C (with fan). Line a 12-cup muffin tin with muffin liners.
2. In a large bowl, combine sugar, yogurt, oil, eggs, carrot, bananas and vanilla. In a separate bowl, combine flour, baking powder, baking soda, salt, and chia seeds.
3. Pour the dry ingredients into the eggs mixture and mix just until combined. Add ½ cup chocolate chips. Spoon mixture into prepared muffin tin.
4. Bake for 17 to 20 minutes until golden. Using a toothpick, insert into the centre of a muffin to make sure it comes out clean. Let cool on a rack.
